AIR FRYER MINI ITALIAN MEATLOAVES FOR TWO
A quick and easy meatloaf that will be on the table in under 30 minutes. I serve these with a side salad. I always have a jar of Italian Seasoning I, from this site, in my pantry so that's what I used.

Steps:
- Preheat the air fryer to 355 degrees F (180 degrees C).
- Combine sirloin, 2 tablespoons tomato sauce, onion, oats, Italian seasoning, parsley, salt, and pepper in a bowl and mix until just incorporated. Form into 2 small loaves that are approximately 4 1/2 inches long and 2 inches wide.
- Lightly spray the inner basket of the air fryer with cooking spray. Add the 2 loaves, without touching one another, and lightly brush the tops with the remaining 1 tablespoon tomato sauce.
- Air-fry meatloaves until an instant-read thermometer inserted into the center reads 165 degrees F (73 degrees C), 17 to 20 minutes.

Steps:
- Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
- In large bowl, mix ground beef, oats, onion, salt, pepper and egg with hands or spoon. Using 1/4-cup measuring cup, scoop beef mixture into each muffin cup; press into cup.
- Make indentation in center of mixture in each cup. Spoon 1 tablespoon cheese into each indentation. Top each with 1 tablespoon desired topping.
- Bake 35 minutes or until meat thermometer inserted in center of loaves reads 160°F. Remove from muffin cups. If desired, top with additional topping before serving.

- For filling, mix first 9 ingredients. In a large bowl, combine beaten egg, bread crumbs and salt. Add beef; mix lightly but thoroughly. On a large piece of heavy-duty foil, pat mixture into a 14x8-in. rectangle. Spread filling over top to within 1 in. of edges. Roll up jelly-roll style, starting with a short side, removing foil as you roll. Seal seam and ends; place on a large plate. Refrigerate, covered, overnight., Preheat air fryer to 325°. Cut roll into 6 slices. In batches, place slices on greased tray in air-fryer basket, with cut side up. Cook until a thermometer reads at least 160°, 12-15 minutes. Mix sauce ingredients; serve with meat loaf.

Steps:
- Spray the air fryer basket with oil and preheat to 390 degrees F (200 degrees C).
- Mix chuck, egg, bread crumbs, mayonnaise, onion powder, and salt together in a large bowl. Form into 6 mini loaves.
- Place meatloaves in the preheated basket, making sure that they don't touch. Cook for 30 minutes for well done. Smooth some ketchup over each meatloaf and cook for 3 minutes more.
