Steps:

  • Preheat an air fryer to 350 degrees F (175 degrees C).
  • Mix beef, red onion, garlic, salt, pepper, Worcestershire, and English mustard together in a mixing bowl.
  • Form patties by pressing a ball of ground beef with your hand and rounding the sides to your desired size.
  • Cook burgers in the preheated air fryer until firm and no longer pink in the centers, about 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 (14.75 ounce) can salmon, drained and flaked
¾ cup panko bread crumbs
½ cup diced onion
⅓ cup mayonnaise
½ medium lemon, juiced
1 large egg, beaten
1 teaspoon dried dill
1 teaspoon seafood seasoning (such as Old Bay®)
salt and freshly ground black pepper to taste
3 large roll or bun (3-1/2" dia)s brioche buns, halved
3 teaspoons mayonnaise, or to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C). Line the air fryer basket with parchment paper and spray with avocado oil.
  • Mix salmon, panko, onion, 1/3 cup mayonnaise, lemon juice, egg, dill, seafood seasoning, salt, and pepper in a bow until well combined. Shape into 3 equal-sized patties.
  • Place salmon patties into the basket and spray with avocado oil.

But most important, this is yet another way to make burgers that your whole family will enjoy. Serve them with hamburger buns or, for a change, serve with large lettuce leaves for a combination of hot and cold and crunchy that's to die for.

1/4 cup chopped scallions
2 tablespoons gochujang (Korean red chile paste)
1 tablespoon dark soy sauce
1 tablespoon toasted sesame oil
2 teaspoons minced garlic
2 teaspoons minced fresh ginger
1/2 teaspoon kosher salt
1 pound 85-percent lean ground beef
2 teaspoons sugar
1/4 cup mayonnaise
1/4 cup chopped scallions
1 tablespoon gochujang (Korean red chile paste)
1 tablespoon toasted sesame oil
2 teaspoons sesame seeds
4 hamburger buns

Steps:

  • For the burgers: In a large bowl, mix the scallions, gochujang, soy sauce, sesame oil, garlic, ginger and salt. Use your hands to add in the ground beef and sugar. Divide the meat into four portions and form them into round patties. Marinate at room temperature for 30 minutes, or cover and refrigerate for up to 24 hours.
  • Place the patties in a single layer in the air-fryer basket (see Cook's Note). Set the air fryer to 350 degrees F for 10 minutes.
  • Meanwhile, for the gochujang mayonnaise: Stir together the mayonnaise, scallions, gochujang, sesame oil and sesame seeds.
  • At the end of the cooking time, use a meat thermometer to ensure the burgers have reached an internal temperature of at least 160 degrees F (well-done).
  • To serve, place the burgers on the buns and top with the mayonnaise.

1 pound fresh salmon
2 tablespoons Dijon mustard
1 tablespoon mayonnaise
1 tablespoon lemon juice
¾ cup panko bread crumbs
2 tablespoons chopped scallions
¼ teaspoon crushed red chili flakes

nonstick cooking spray

Steps:

  • Remove any skin and pin bones from salmon, then chop into 1/4-inch pieces. Transfer 1/4 of the salmon pieces to a food processor. Place remaining salmon in a large bowl.
  • Add mustard, mayonnaise, and lemon juice to the food processor. Pulse until a thick paste forms. Transfer mixture to the bowl with the remaining salmon. Mix in bread crumbs, scallions, and chili flakes until evenly combined.
  • Form salmon mixture into 4 patties. Place on a baking sheet and season with salt and pepper. Place in the freezer for 1 hour.
  • Preheat an air fryer to 400 degrees F (200 degrees C). Spray the air fryer basket with nonstick spray.

Four 4-inch portobello mushrooms, stems removed
1 tablespoon olive oil
Kosher salt and freshly ground black pepper
3 ounces white Cheddar, shredded (about 1 cup)
3 ounces Havarti cheese, shredded (about 1 cup)
2 ounces cream cheese, at room temperature
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 cup all-purpose flour
1 large egg
1 cup panko
Olive oil cooking spray
1/4 cup mayonnaise
2 tablespoons barbecue sauce
1 tablespoon ketchup
4 brioche burger buns, split
4 leaves bibb or green leaf lettuce
1 large tomato, sliced

Steps:

  • Preheat a 3.5-quart air fryer to 400 degrees F.
  • Toss together the mushrooms, oil, 1/4 teaspoon salt and a few grinds of pepper. Place the mushrooms in the air-fryer basket and fry until tender, about 3 minutes per side. Transfer to a plate to cool, 5 to 8 minutes.
  • Meanwhile, stir together the Cheddar, Havarti cheese, cream cheese, chili powder, garlic powder and onion powder in a medium bowl. Divide the mixture into 4 portions. Form each portion into a disk about 3 1/2 inches wide to fit inside the mushroom caps.
  • Once the mushrooms are cool enough to handle, horizontally cut off the upper third of each mushroom cap. Place 1 cheese disk inside each mushroom, gill-side up, and sandwich with the top of the mushroom cap, pressing down to cover the cheese filling.
  • Whisk the flour and 1/4 teaspoon salt in a small baking dish. Whisk the egg in a second baking dish. Put the panko in a third baking dish.
  • Dredge the mushrooms in the flour, shake off any excess and coat in the egg mixture. Allow the excess egg to drip off, then coat in the panko, pressing to adhere. Spray the mushrooms with the cooking spray and place in the air fryer basket. Cook until golden brown, about 4 minutes per side.
  • Mix together the mayonnaise, barbecue sauce and ketchup in a small bowl. Spread a generous layer of the sauce on both sides of the buns. Add to each bottom bun 1 lettuce leaf, 1 tomato slice and 1 mushroom burger. Finish with the bun tops, slice in half and serve.
