GREEK SALAD WITH SHRIMP

A light and fresh Greek salad with tender shrimp, briny olives, juicy tomatoes, crisp cucumbers, zesty red onion, salty feta cheese, and a homemade Greek salad dressing is a quick lunch or dinner for busy days!

½ cup extra virgin olive oil
3 tablespoons red wine vinegar
1 tablespoon freshly squeezed lemon juice
1 clove garlic, minced or pressed
1 tablespoon minced fresh oregano ((or 1 teaspoon dried oregano))
1 tablespoon minced fresh parsley ((or 1 teaspoon dried parsley flakes))
½ teaspoon Dijon mustard
½ teaspoon kosher salt, or more to taste
¼ teaspoon ground black pepper, or more to taste
2 romaine hearts, chopped
1 lb. cooked large shrimp, peeled and deveined
1 cup crumbled feta cheese
1 English seedless cucumber, halved lengthwise and thinly sliced (or 2-3 mini cucumbers sliced)
1 pint cherry or grape tomatoes, halved
¾ cup pitted kalamata olives
½ red onion, sliced thin
Kosher salt and ground black pepper, to taste
Optional garnish: pepperoncini
Optional, for serving: pita bread and tzatziki sauce

Steps:

  • In a small bowl or in a jar with a lid, whisk or shake together the ingredients until completely combined. Taste and season with salt and pepper. Store, covered, in the refrigerator for up to 3 days. Allow to come to room temperature and shake well before using.
  • In a large bowl, combine romaine, shrimp, feta cheese, cucumber, tomatoes, olives, and red onion.
  • Drizzle with some of the dressing; toss to coat. Add more dressing, as needed, to moisten the salad ingredients.
  • Season with salt and pepper, to taste. Garnish with pepperoncini and serve immediately with warm pita bread and tzatziki sauce.

1 pound jumbo shrimp (16 to 20 per pound) (peeled and deveined (see notes))
Salt and freshly ground black pepper
1/2 teaspoon dried oregano
1-1/2 tablespoons extra-virgin olive oil
1 tablespoon freshly squeezed lemon juice
1 medium head romaine lettuce (washed and torn into bite-sized pieces)
1 cucumber (peeled and sliced)
4 thin slices red onion (separated into rings)
4 ounces Feta cheese (crumbled (reduced fat is okay))
2 ripe tomatoes (cored and cut into wedges)
12 pitted Kalamata olives (sliced)
4 lemon wedges (optional)
1/3 cup extra-virgin olive oil
1-1/2 tablespoons freshly squeezed lemon juice
1 tablespoon red wine vinegar
1/2 teaspoon Dijon-style mustard
1 clove garlic (minced)
1 teaspoon dried oregano (crushed)
Salt and freshly ground black pepper

Steps:

  • To prepare the dressing, whisk the olive oil, lemon juice, red wine vinegar, mustard, garlic and oregano together in a small bowl. Season to taste with salt and pepper and set aside.
  • Lightly season the shrimp with salt, pepper, and oregano. Heat the olive oil in a frying pan over medium-high heat and add the shrimp in a single layer.
  • Cook the shrimp until firm and opaque, 1-1/2 minutes per side. Remove from the heat, drizzle with lemon juice and set aside to cool.

1 tablespoon fresh cilantro
1/4-1/2 teaspoon sugar
3/4 teaspoon kosher salt, divided
2 tablespoons olive oil, plus
2 teaspoons olive oil, divided
1 lb medium shrimp, shelled and deveined
1 -2 clove garlic, minced,according to taste
1/4 teaspoon crushed red pepper flakes
1/2 lb mesclun or 1/2 lb mixture greens
4 ounces feta cheese, crumbled

Steps:

  • In a medium bowl combine vinegar, cilantro, 1/2 tsp.
  • salt, and sugar.
  • Slowly whisk in the 2 Tblsp.
  • of oil.
  • Set this aside.
  • Heat the remainder 2 tsp.
  • oil in medium skillet over medium heat add the next 3 ingredients and remaining 1/3 tsp salt.
  • Cook 2-4 min.
  • or until opaque.
  • Combine with dressing and the greens.
  • Toss well to coat then top your salad with the Feta Cheese and Serve--.

1/4 cup olive oil
1 onion, chopped
3/4 lb tomatoes, chopped (2 medium-size tomatoes)
2 cloves garlic, crushed
1 small bay leaf
1/2 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup chopped fresh parsley
1/2 teaspoon hot sesame oil (do not omit)
salt & freshly ground black pepper, to taste
1 lb uncooked cleaned and deveined shrimp
8 ounces feta cheese
8 black olives, halved (preferably Greek olives)
1/2 lemon
4 cups hot cooked rice

Steps:

  • Preheat oven to 475ºF.
  • Heat oil in a large skillet over medium-high heat.
  • Add onion and sauté until soft.
  • Stir in tomatoes, garlic, bay leaf, basil, oregano, parsley, hot sesame oil, salt and pepper.
  • Cook 4 to 5 minutes.
  • Remove vegetables from skillet with slotted spoon, leaving juices in skillet, and spread vegetables in bottom of an 8 x 8 x 2-inch baking pan.
  • Bring pan juices to a boil; add shrimp.
  • Cook 2 minutes or until shrimp turn pink.
  • Add shrimp with juices to baking pan; crumble feta over top.
  • Arrange olives on top of feta and squeeze lemon juice over all.
  • Bake 10 to 15 minutes.
  • Serve over rice.

1/3 cup chopped onion
1 celery rib, chopped
2 tablespoons chopped cilantro, can use parsley instead
1 teaspoon lemon juice
1/2 teaspoon sugar
1/2 cup mayonnaise
1/8 teaspoon hot sauce, more to taste
1/8 teaspoon paprika
1/8-1/4 teaspoon pepper

Steps:

  • In a large bowl, toss together shrimp, onion, celery and cilantro.
  • Stir together remaining ingredients and pour over shrimp salad mixture.
  • Stir well.

1/4 cup extra virgin olive oil
1 1/2 large onions, coarsely chopped
1 lb tomatoes, seeded and chopped,reserving juice and seeds
3 -4 cloves garlic, crushed or chopped,more to taste
1 bay leaf
1 teaspoon dried basil, lightly crushed to release flavor
1 teaspoon dried oregano, lightly crushed to release flavor
1/2 cup chopped fresh parsley
1/2 teaspoon sesame oil
2 -3 dashes hot pepper oil (or Tabasco, distant second choice)
salt & freshly ground black pepper, to taste.
1/2 cup red wine or 1/2 cup white wine, as required for additional liquid
1 1/2 lbs large shrimp, peeled and deveined
8 ounces crumbled feta cheese, more to taste
15 -20 black kalamata olives, pitted and halved
1 lemon
hot cooked rice or rice, pilaf as accompaniment

Steps:

  • Preheat oven to 475 degrees F.
  • Heat olive oil in a large skillet over medium heat.
  • Add onions and saute until soft.
  • Stir in tomatoes, garlic, bay leaf, basil, oregano, parsley, sesame oil, hot oil, and salt and pepper to taste.
  • Add reserved tomato juice and wine, and cook for 4-5 minutes.
  • Remove vegetables from skillet using a slotted spoon, leaving juices in skillet.
  • Spread vegetables in the bottom of an 8"x8"x2" baking pan.
  • Increase heat to medium-high, and bring pan juices to a boil; add shrimp and cook 2-4 minutes, turning several times, until shrimp are pink and juices have lightly browned on the shrimp.
  • Add shrimp to baking pan.
  • Deglaze skillet with a little more wine, and pour over shrimp.
  • Crumble feta cheese over shrimp, arrange olives over cheese, and squeeze half of lemon over top.
  • Bake for 10-15 minutes.
  • Remove from oven, and squeeze remaining lemon over top.
  • Serve with rice or rice pilaf.
  • Makes 4-5 servings.
