With just 4 basic ingredients you can have a healthy and easy chicken enchilada casserole ready to go in the oven -- with only 10 minutes of prep time!

2 cups (about 12 ounces) diced or shredded cooked chicken ((such as the meat from a rotisserie chicken))
1 ¾ cups enchilada sauce, divided
1 cup shredded Mexican-blend cheese, divided
8 (6 inch) corn tortillas
Optional garnish: sour cream, sliced green onion or red onion, diced tomatoes, fresh cilantro, lime wedges, sliced olives, diced avocado or guacamole

Steps:

  • Preheat oven to 350°F (180°C). Grease a 2-quart baking dish.
  • Spread ¼ cup of the enchilada sauce in a thin layer in the bottom of the dish.
  • In a large bowl, stir together the chicken, ¾ cup of the enchilada sauce, and about half of the cheese (½ cup).
  • Place 4 of the tortillas in the bottom of the prepared dish, tearing or overlapping them as necessary to cover the bottom.
  • Top with half of the chicken mixture and drizzle with ¼ cup of enchilada sauce. Repeat layers one more time.
  • Cover with foil and bake for 30 minutes. Uncover, sprinkle with remaining ½ cup of cheese, and bake for an additional 5-10 minutes (until cheese melted and casserole is hot and bubbly).
  • Garnish with optional toppings and serve.

It was a lazy day and I didn't feel like going to the store, but the family wanted enchiladas. I didn't have any tortillas nor any chicken defrosted so I started looking in my freezer and fridge to see what I could come up with.. That is when I saw the taquitos and a Star was born!

18 frozen chicken taquitos
1 can(s) 14.5 oz mild red enchilada sauce
1 can(s) 10.75 oz cream of mushroom soup
8 oz shredded cheddar cheese

Steps:

  • 1. Preheat oven to 375 degrees F (190 degrees C).
  • 2. Grease a 9x13-inch baking dish.
  • 3. Arrange taquitos in the prepared baking dish.
  • 4. Blend enchilada sauce and cream of mushroom soup together smooth; Pour over taquitos
  • 5. Sprinkle Cheddar cheese over sauce layer.
  • 6. Place dish on the middle rack in the preheated oven; cook until heated through, about 45 minutes. Cool for 15 minutes before serving.

1 lb ground beef (cooked)
10 oz red enchilada sauce
2 c cheese (shredded)
12 corn tortillas (flour can be used instead)

Steps:

  • Heat oven to 375 degrees.
  • Spray a 9x13 baking dish with cooking spray.
  • Mix cooked ground beef with ¾ c. enchilada sauce and 1 c. of cheese.
  • Spoon approx ¼ c. filling into each tortilla, roll up and place seam side down into baking dish.
  • Pour remaining sauce over rolled tortillas.
  • Sprinkle with remaining cheese.
  • Bake for 25-30 mins or until cheese is melted.
  • * Can cover with foil for more moist enchiladas. Remain in final 5 minutes of baking.

10 oz enchilada sauce (la victoria, mild)
15 oz canned chili (wolf brand)
6-8 frozen taquitos
ALTERNATIVE TO TAQUITOS
6-8 corn tortillas
2 c shredded cheddar cheese (or cooked, seasoned beef)
3-4 tsp minced onion

Steps:

  • 1. Combine enchilada sauce and chili; mix well. Spoon a small amount into the bottom of a 9"x 7" baking dish, spreading to cover lightly.
  • 2. Place taquitos in a single layer over the sauce. NOTE: When I used the whole package of taquitos, there wasn't enough sauce, which is why I only recommend 6-8.
  • 3. If using alternative method, spoon 1/2 tsp. onion and 1/4 c. cheese into each tortilla and roll up tightly, then place in a single layer in baking dish.
  • 4. Pour remaining sauce over taquitos. If desired, top with extra cheese.
  • 5. Bake at 400 degrees for 15 - 20 minutes, until cheese is melted and sauce is bubbly.

2 (16 ounce) jars prepared salsa
1 pound ground beef
1 (15.5 ounce) jar prepared salsa con queso
20 (8 inch) flour tortillas
1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish, and pour the salsa into the bottom of the dish. Set aside.
  • Cook and stir the ground beef in a skillet over medium heat for about 10 minutes, until meat is browned and crumbly. Drain the grease from the beef, and add the salsa con queso to the skillet, stirring to mix well. Place about 2 tablespoons of the beef mixture down the center of each tortilla, roll the tortillas, and place them seam side down on top of the salsa in the baking dish. Sprinkle the shredded cheese on top of the enchiladas.
  • Bake for 15 to 20 minutes in the preheated oven, until the cheese is browned and the enchiladas are hot and bubbling.

I found this recipe on allrecipes submitted by Kimm. I have made several changes to it. If you want a mild spice go with mild enchilada sauce. I use 1/2 mild and 1/2 hot as we like things spicy. The kids request this often!

16 ounces sour cream
3/4 lb shredded monterey jack cheese (I use mexican blend)
1 (20 ounce) can red enchilada sauce
18 (6 inch) corn tortillas
1 (14 1/2 ounce) can diced tomatoes with jalapenos (can use green chilies for milder)
1 (14 1/2 ounce) can refried beans
1 medium onion, chopped
1 teaspoon minced garlic

Steps:

  • Preheat oven to 350 degrees F (175 degress C).
  • In a bowl combine sour cream, onion, totatoes, refried beans, garlic and 3/4 of the cheese.
  • Into a 9x13 pan pour a small amount of enchilada sauce to coat bottom of pan. Layer 6 tortillas on bottom of pan. Layer half of the cheese-sour cream mixture over the tortillas. Repeat this layer once more. Pour the remaining enchilada sauce over the final layer of tortillas. I ususally top with a sprinkle of cheese.
  • Bake 20 - 30 minutes. Cut into squares and serve. I serve with salad and crusty bread.
