Besides 'Pasta In Red Sauce' one more recipe has been recently added to our family's favorite meal ,Black Bean Minestrone Soup. This hearty minestrone soup is filled with lots of veggies ,black beans and small shell pastas. It's a one pot meal that comes together quickly. Number Of Ingredients 18

2 tbsp olive oil
1 medium yellow onion, diced
2 medium carrots, chopped
2 medium tomatoes, chopped
2 celery ribs, thinly sliced
3 garlic cloves, grated
1 cup small pasta shells
1 cup black beans( Cooked)
1/4 cup tomato puree/ res sauce
4 cups water/ vegetable broth
1 tsp dried oregano
1 tsp dried basil
Salt to taste
Freshly ground black pepper
Pinches of red pepper flakes
Avocado slices ,optional
Fresh basil for garnish
Grated Parmesan cheese, optional, for serving

Steps:

  • In a sauce pan heat up some oil. Then add the chopped onions,celery,tomatoes and carrots.
  • Saute the veggies until soft and then add the \ grated garlic and cook until raw smell of garlic is gone.
  • Then add the cooked beans,salt to taste , black pepper, oregano and basil with 4 cups of water or vegetable broth.Cover and simmer for 20 minutes.
  • If you add water then make sure to grind some soup in a blender before adding pasta to it. It makes the soup creamy, thick and more flavorful.
  • Stir in the pasta and cook, uncovered, for 10 more minutes, until the pasta is cooked through.
  • Serve with some grated Parmesan and red chili flakes if desired. I also added some avocado slices on top. Enjoy!
