BAKED EGGS IN TOMATO SHELLS image

12 medium-ripe firm tomatoes
Salt and pepper
1 1/2 tsp dried basil, crumbled
12 eggs
3 oz Swiss cheese, shredded (3/4 C)
3/4 C fine dry bread crumbs
6 T butter melted

Steps:

  • Preheat to 350. Cut a thin slice from the top of each tomato; scoop out the pulp. Turn the tomatoes upside down and let them drain for 10 minutes. Turn over sprinkle with salt, pepper, and basil. Arrange in greased baking dish, cut side up. Break egg into each shell; sprinkle with salt. Bake until egg whites have set, about 35 minutes. In a small bowl, combine cheese, bread crumbs, butter; sprinkle the mixture on the eggs. Return eggs to oven and bake until cheese melts and crumbs are browned about 2 minutes. Serve immediately.
