Baked Butternut Squash image

My Mom taught me this recipe. She also told me to make sure to use small to medium sized squash, so they're not stringy.

1 medium butternut squash
1-2 Tbsp butter, room temperature
1-2 Tbsp cinnamon
1 pinch each of salt and pepper
water

Steps:

  • 1. Pre-heat oven to 350 F. Cut squash in half, scoop out seeds. Score squash in two directions diagonally, spread butter on it, add salt and pepper; cinnamon. Put in a 2 qt. pan with a little water in it. Cover with foil. Bake for about 45-60 mins. Keep checking it with a fork; when it slides off the fork, it's done.
  • 2. When the squash has cooled, scoop out squash into seving size portions into quart size freezer baggies to put in the freezer; save some for that night's dinner. Enjoy!
