Autumn Cheesecake image

This cheesecake not only taste good but it is very pretty. It has a fall feeling to it.

1 c graham cracker crumbs
1/2 c finely chopped pecans
3 Tbsp sugar
1/2 tsp ground cinnamon
1/4 c (1/2 stick) butter melted
2 pkg (8 ounces each) cream cheese softened
1/2 c sugar
1/2 tsp vanilla
2 eggs
1/3 c sugar
1/2 tsp cinnamon
4 c sliced peeled apples
1/4 c finelly chopped pecans

Steps:

  • 1. CRUST: MIX crumbs, pecans, sugar, cinnamon and butter; press onto bottom of 9-inch springform pan. Bake at 325 for 10 minutes if using a silver springform pan.(Bake at 300 for 10 minutes if using a dark nonstick springform pan).
  • 2. FILLING: MIX cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs, mixing on low speed just until blended. Pour over crust.
  • 3. TOPPING: MIX sugar and cinnamon; toss with apples. Spoon apple mixture over cream cheese layer; sprinkle with pecans.
  • 4. BAKE: At 325 for 1 hour and 10 minutes to 1 hour and 15 minutes or until center is almost set if using a silver springform pan. (bake at 300 for 1 hour and 10 minutes to 1 hour and 15 minutes or until center is almost set if using a dark nonstick springform pan.) Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Refrigerate 4 hours or overnight.
