Armadillo Eggs image

I have been making these for family get togethers in barbeques for years. These are always a special request I hope you enjoy them I do

Number Of Ingredients 3

20 large jalapenos, fresh
40 slice(s) bacon, raw
2 large cream cheese, room temperature

Steps:

  • For every jalapeno you buy you need two slices of bacon. So if you want to make 40 eggs thats 20 jalapenos and 40; slices of bacon. Preheat oven to 350º 1. Slice jalapenos lengthwise and then take a spoon and scrape out the seeds and the membranes. Make sure you wear gloves it can get a little spicy. 2. Rinse the jalapeno, pat dry and then using the back of a spoon press the softened cream cheese into the hollowed out part of the jalapenos. 3. take a slice of bacon and wrap it around the jalapenos and place them on to the pan. When all are wrapped place into the oven and cook until bacon is done
