AMY'S POTATO SALAD image

8-10 Medium Russet Pototos
4-5 eggs
sliced olives (small can)
2-3 medium dill pickles (chopped)
mayonnaise (at least 1/2 cup)
mustard (about 1 TBS.)** I mix the mustard with the mayonnaise before I mix everything together.
salt
pepper

Steps:

  • 1. Cook potatos (soft boil approx. 30 minutes - I like them to be soft. I just wash the pototos & cook them with the peel intact & remove the peel just before I cut them up to mix with the other ingredients.) 2. Hard boil the eggs (also about 30 minutes) 3. Cut up cooked potatos and slice eggs. 3. Mix all ingredients - salt & pepper to taste. Add more mayonnaise as needed so the potato salad is moist. 4. Sprinkle salad with Paprika for added flavor & serve.
