Zucchini (Mock) Crab Cakes image

Number Of Ingredients 8

2 cups coarsely grated zucchini (drain liquid)
1 cup seasoned bread crumbs
2 tablespoons grated onions
2 tablespoons mayonnaise
2 eggs
2 teaspoons Old Bay Seasoning
1/2 teaspoon salt
1 tablespoon chopped parsley

Steps:

  • In a mixing bowl combine all ingredients, mix, and shape into cakes. Fry in Crisco (a few tablespoons), browning each side.
