YELLOW TOMATOES IN SPICED BALSAMIC VINAIGRETTE image

1/2 c thinly-sliced green onions (scallions)
1 Tbls minced, seeded jalapeno pepper
8 med yellow tomatoes cut into wedges
1-1/2 Tbls olive oil
1/4 c grated, peeled fresh ginger
1 Tbls ground cumin
1 Tbls freshly-cracked black pepper
2 tsp paprika
1 tsp ground tumeric
4 garlic cloves, minced
3/4 c balsamic vinegar
3 Tbls brown sugar
1 tsp kosher salt

Steps:

  • Combine onion, jalapeno and tomatoes in a large bowl. Heat oil in large saucepan over medium-high heat. Add ginger and next five ingredients; saute 1 minutes. Add vinegar, sugar and salt to pan, stirring to combine. Bring to a boil, cook 1 minute, stirring frequently. Pour spice mixture over tomato mixture; toss gently. Serve at room temperature.
