I arrived at this by trial & error, picking my favorite parts from many existing granola recipes and adding stuff on my own. This will fill your belly & clear out your arteries.(chant with me: fiber..fiber...fiber...) Feel free to use different nuts and/or dried fruit. But the crytallized ginger really makes it special. ;) This recipe makes a LOT - good for a crowd but it also keeps for a long time in an airtight container (or 2). This is wicked tasty. (said in my best Maine accent, lol) Enjoy!

Steps:
- Preheat oven to 300°F.
- Combine in a very large roasting pan the oats through nutmeg. Drizzle oil, honey, maple syrup & vanilla over all & stir well to combine.
- Bake for 1 - 1.5 hrs, stirring every 20 minutes until it looks dry-ish & toasty.
- When cooled, stir in fruit.
