Whole Wheat Bread with Orange Zest & Coffee image

This recipe is written for a bread machine, but you can always make this bread by hand or using a stand mixer. The 30 mind baking time given is for the oven. If baking in the bread machine the time will be however long your machine takes.

Number Of Ingredients 13

1 1/2 cup(s) milk, warm (any kind)
2 large eggs at room temperature and lightly beaten
2 tablespoon(s) butter at room temperature
2 teaspoon(s) sea salt or to taste
1 teaspoon(s) instant coffee powder (can use more if you wish)
4 tablespoon(s) honey
2 cup(s) whole wheat flour
2 cup(s) white flour
3 tablespoon(s) wheat germ
1/2 cup(s) unsalted sunflower seeds (opitonal)
3 teaspoon(s) bread machine yeast
2 tablespoon(s) fresh orange zest
1 cup(s) oats

Steps:

  • In your bread machine bowl, combine milk and eggs, butter, salt, instant coffee and honey to the bread machine bowl.
  • Now add the dry ingredients into the bread machine bowl with yeast last. Choose the "large" loaf setting, which may also be the "2 lb." setting depending on your machine, and also select the "whole wheat" option if you have it. Start the machine.
  • As your dough begins to mix, watch as it takes shape. It should be a smooth dough when it has kneaded for a few minutes, pulling away from the sides of the bowl.
  • If the dough is too wet and resembles a thick batter, add flour by the tablespoon until it rolls into a ball and continues to knead. If the dough is too dry, add water by the teaspoon until dough becomes a smooth, moist ball.
  • After kneading, the bread machine will allow the dough to rise and later bake if you have selected that option. OR Remove the dough and shape into a loaf shape and oven bake in a standard loaf pan , bake at 375 F for about 30 minutes or until bread is a dark brown on top and sounds hollow when thumped.
  • As soon as bread is done baking, take out of the bread machine bowl (or oven pan) and brush cold milk on all sides of the bread using a pastry brush. This will help keep the outer crust softer.
  • Let the bread cool completely on a wire rack before slicing.
