White Chocolate Pumpkin Dreams image

FOR THE COOKIES
1 cup(s) butter, softened
1/2 cup(s) sugar
1/2 cup(s) packed brown sugar
1 - egg
2 teaspoon(s) vanilla
1 cup(s) canned pumpkin
2 cup(s) all purpose flour
3 1/2 teaspoon(s) pumpkin pie spice
1 teaspoon(s) baking powder
1 teaspoon(s) baking soda
1/4 teaspoon(s) salt
1 package(s) 10-12 ounces white baking chips
1 cup(s) chopped pecans
FOR THE PENUCHE FROSTING
1/2 cup(s) packed brown sugar
3 tablespoon(s) butter
1/4 cup(s) milk
1 1/2-2 cup(s) powdered sugar

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in the egg, vanilla, and pumpkin. Combine dry ingredients; gradually add to the cream mixture and mix well. Stir in chips and pecans. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Bake at 350F for 12-14 minutes or until firm. Remove to wire racks to cool.
  • For frosting, combine the brown sugar and butter in a small saucepan. Bring to a boil; cook over medium heat for 1 minute or until slightly thickened. Cool for 10 minutes. Add milk; beat until smooth. Beat in enough powdered sugar to reach the desired consistency. Spread over the cooled cookies.
