WHITE BEAN AND MUSHROOM STEW image

Number Of Ingredients 10

2 TBSP Olive Oil
1 onion, chopped
1 stalk celery, diced
1 carrot, peeled and diced
1 lb cremini mushrooms, quartered
1/2 cup white wine
1 28 oz can whole tomatoes, pureed in a blender
1 sprig fresh rosemary
2 cups cooked white beans
Coarse salt and freshly ground pepper

Steps:

  • 1. Heat oil in a medium pot over medium heat. Cook onion, celery and carrot until tender, about 8 minutes. Increase heat to medium-high, add mushrooms and cook until softened about 5 - 7 minutes. 2. Deglaze with white wine scraping up any brown bits. 3. Add tomatoes, rosemary, beans and 1/2 cup water. Bring to boil, reduce heat and simmer until slightly thickened about 15 minutes. Season with salt and pepper.
