Number Of Ingredients 10

1 tablespoon(s) cornstarch
3 tablespoon(s) soy sauce
1 tablespoon(s) dry sherry
1/2 teaspoon(s) ground ginger
1 pound(s) chicken breasts, boneless and skinless, cut into 1-inch pieces
4 tablespoon(s) olive oil
1/3 cup(s) green onions, sliced in 1-inch pieces
2 clove(s) garlic, minced
1/2 pound(s) fresh snow peas
1 cup(s) walnut pieces

Steps:

  • In a medium bowl, combine cornstarch, soy sauce, sherry and ginger; add chicken pieces. Let stand 15 minutes.
  • Meanwhile, heat wok or large skillet and add 3 Tbsp. of the oil; heat until smoking. Add green onions, garlic and snow peas. Cook 3 minutes, stirring with slotted spoon. Remove mixture to a bowl.
  • Add remaining oil to wok or skillet; heat. Add chicken. Cook, stirring, until done and soy mixture begins to coat pieces, about 5 minutes. Add walnuts and vegetable mixture. Toss until mixed. Serve with cooked rice.
  • NOTE: You may add more soy sauce if needed, and may substitute cashews for walnuts.
