1/4c plus 2 tbs olive oil 4 thyme sprigs 1 clove garlic 4 12 oz chops sauce 2 c cab 2 lg shallots 1 tbs unsalted butter 2 tbs flour 2c beef stock s/p

Steps:

  • marinate chops in first 4 make sauce by reducing 2c of wine to 1/2 c with half of the shallots saute balance of shallots w/ butter add flour if available use veal demi and leave out beef stock and roux do add shallots strain season with s/p
