TROPICAL SWEET POTATOES image

Number Of Ingredients 9

1 (40 oz.) can sweet potatoes, drained and mashed
3/4 c crushed pineapple, drained
1/4 c brown sugar
1/4 c orange juice
1/4 c raisins
1/4 c flaked coconut
1/4 c pecan pieces
2 tsp pumpkin pie spice
1 tsp salt

Steps:

  • 1. Heat oven to 350 degrees. Spray a 2-quart casserole with non-stick cooking spray. Mix all ingredients in a large bowl. Combine well. Pour into the casserole dish and bake for 30 minutes.
