TRI COLOR BEAN SOUP image

Tricolor beans with sweet Italian sausage
Serves 5
1/3 c. olive oil
2 cloves garlic, crushed
1 onion, diced
2 stalks celery, sliced
1 cup sweet Italian sausage, sliced
14 oz. white beans, preferably cannelini, drained
15 oz. can chick peas, drained
15 oz. can red kidney beans, drained
4 c. chicken stock
2 bay leaf
1/3 c. fresh grated Parmesan
3 tbs. parsley, chopped

Steps:

  • Brown onion, garlic, celery and sausage until mixture become golden brown. Add beans, bay leaf and chicken stock and cook together for 20 minutes. Discard bay leaf. Add parmesan and cheese and parsley and serve.
