Tomato-Basil Baked Fish image

This recipe can be used with several kinds or fish. The ingredients are those usually on hand. Baking fish is so easy, that this is an often used recipe.

Number Of Ingredients 7

juice from 1 lemon
1 tsp olive oil, extra virgin
8 oz orange roughy, red snapper, cod, or haddock fillets
1 Tbsp basil, fresh, chopped
1/8 tsp each salt and pepper
2 plum tomatoes, thinly sliced
2 tsp grated parmesan cheese

Steps:

  • 1. In a shallow dish, combine the lemon juice and oil. Add fish fillets; turn to coat.
  • 2. Place in a greased 9-inch square baking dish. Sprinkle with basil, salt and pepper. Arrange tomatoes on top; sprinkle with Parmesan cheese.
  • 3. Cover and bake at 400°F for 10-12 minutes or until fish flakes easily with a fork.
