Toffee apple upside down cake image

Number Of Ingredients 10

25 grams vegan margarine
3 piece Dessert Apples
195 grams Muscovado Sugar
180 grams Flour
1 teaspoon Baking Soda
1 1/2 teaspoons Mixed space
80 milliliters Sunflower oil
1 teaspoon Vinegar
1 piece Lemon
85 grams Walnuts

Steps:

  • Preheat oven to 180 degrees and grease a 23cm cake tin
  • Core and crossly grate 2 apples and finely slice the remaining apple.
  • Melt 85g of the sugar and the margarine, then pour it into the prepared tin. Top with sliced apple in a single layer.
  • Combine the flour 110g of sugar, the soda and mixed spice in a bowl.
  • In a seperate bowl, combine the oil, 180ml of water, the vinegar, grated apple and lemon zest.
  • Mix the dry ingredients with the wet and mix thoroughly.
  • Roughly chop and stir in the walnuts and pour over the layer of apple in the cake tin
  • Bake for 30 minutes or until a skewer comes out clean,
  • Leave the cake to cool for 5 minutes before turning out.
