Tim's chili image

Number Of Ingredients 2

2 lbs pound beef
2 cup boodiddly

Steps:

  • Prep time - 1 hour Cooking time - minimum 90 minutes Total time - 2.5 hours 2 lbs ground beef (90/10 or 85/15) 1 large onion diced 3 large garlic cloves minced (1) 28 oz can of crushed tomatoes (1) 28 oz can diced tomatoes (1) 14 oz can diced tomatoes (1) 40 oz can light red kidney beans (drained) (1) 28 oz can dark red kidney beans (drained) - or (2) 12 oz cans works too 1 Tomato can or 2 of water (if it gets too watery, use a can of tomato paste) 1 small/medium red pepper diced 1 small/medium yellow pepper diced 1 large green pepper diced 1 jalapeño (with seeds) diced - half for less spicy 6-8 tbsp chili powder (depends on your taste - I prefer 8) 2 tsp black pepper 4-5 tsp salt (start with 4 and add more to taste) 3 tsp ground cumin 1 tsp curry powder If you really want heat - add a tsp of white powder and/or a tsp of cayenne Chop garlic, onion, peppers Brown meat in skillet over med-hi heat Drain meat, set aside Using the same skillet, add chopped veggies and sauté until soft (6-8 minutes) In large pot combine browned meat, sautéed veggies, tomatoes, all spices, and water Bring to boil, cover, lower heat to simmer for minimum of 1 hour stirring occasionally Add beans, simmer minimum 30 minutes (the more time the better) Salt to taste
