THAI-STYLE CURRIED CHICKEN SALAD image

Number Of Ingredients 10

3 cups cold leftover chicken, shredded by hand
(this should be from marinated grilled chicken breast or a store-bought rotisserie chicken)
handful of Thai basil, chopped
handful of fresh mint, chopped
2 stalks celery sliced thinly on the diagonal
1/2 red bell pepper, chopped
3 scallions sliced thinly on the diagonal
2 tbsp minced Italian parsley
1/2 cup reduced fat mayonnaise
1 tsp curry powder

Steps:

  • Combine all ingredients in large salad bowl and toss well.
