I'm a leftover queen! I hate to throw things away and be wasteful. This is a really quick and tasty way to use up those leftover mashed potatoes!

Number Of Ingredients 6

2 c leftover mashed potatoes
1 egg
1/4 c flour
2 tsp grated onion, optional
1/4 c canola oil (or oil of your choice)
salt and pepper

Steps:

  • 1. Mix potatoes, egg, onion, salt & pepper. Shape into patties and dredge in flour. Heat the oil in a skillet. When hot, brown patties on both sides.
