Tasty Vegan Guacamole Sandwich image

This vegan sandwich is delicious if you love guacamole (like I do) and are looking for something different for lunch. The layers stay together better when the sandwich is on a fresh roll. Serve with chips and salsa!

½ ripe avocado, thinly sliced
½ ripe tomato, thinly sliced
4 thin slices cucumber
1 thin slice red onion
1 hoagie roll, split lengthwise
1 dash lemon juice
salt and ground black pepper to taste
1 leaf Romaine lettuce
1 teaspoon vegan mayonnaise (such as Veganaise®)

Steps:

  • Layer avocado, tomato, cucumber, and red onion on the bottom half of the roll. Sprinkle with lemon juice, salt, and pepper. Place lettuce on top. Spread a thin layer of vegan mayonnaise onto the top half of the roll and place it on top of the sandwich.
