Tasty Tomato Salad image

I first had this at my husband's little Italian grandma's house. She would try to make a lot of things ahead that we could just help ourselves to whenever we visited her. Everyone always loved this salad!

Number Of Ingredients 11

4-6 medium to large ripe tomatoes
3 green onions, sliced
1/4 cup(s) extra virgin olive oil
3 tablespoon(s) red wine vinegar
2 tablespoon(s) honey
2 clove(s) garlic, minced
1 1/2 teaspoon(s) oregano
cup(s) handful of fresh parsley, chopped
handrul of fresh basil leaves
salt and pepper to taste
1 package(s) (8 oz.) fresh mozzarella pearls

Steps:

  • Remove green top and cut the tomatoes into bite-sized wedges.
  • In a pint size jar, mix the olive oil, red wine vinegar, honey, garlic, and oregano, with dash of salt and pepper to a jar. Screw on the lid and shake to combine.
  • Combine the tomatoes, mozarella pearls, parsley and basil in a bowl.
  • Pour the dressing over the tomatoes and toss.
  • Chill in the refrigerator until ready to serve.
