Tangy Macaroni Salad image

I seldom enjoy macaroni salad. All those I've eaten are either to sticky or too bland, or both. I think macaroni salad, and potato salad as well, should help moisten your mouth when eating a sandwich, so I like mine "loose". At a church potluck, the minister complimented me, saying this is the only macaroni salad she liked....

Number Of Ingredients 9

1 c 1 cup of mayo or light mayo, not salad dressing.
2 Tbsp vinegar, white vinegar best.
1 Tbsp prepared mustard, yellow or brown
1 tsp sugar
1 tsp salt
1/4 tsp black pepper
1 c finely chopped green or red bell pepper
1/4 c finely chopped onion
8 oz elbow macaroni (cook and drain it)

Steps:

  • 1. Boil a few quarts of water. when boiling, add 8 oz. of elbow macaroni.
  • 2. In the meanwhile finely chop the bell peppers and onions. Set aside.
  • 3. Combine the first six ingredients to make the dressing.
  • 4. Drain the macaroni and toss to rid from water.
  • 5. In a large bowl, stir in all ingredients,cover and chill.
