I got this recipe from my cousin Mary about 47 years ago..the kids were little and this was the rage back then- everyone was raving about it and it was at every party and picnic we went to..everyone had a little different twist to it- but I liked Mary's the best..she gave me her recipe to post in my second cookbook;(also in...

Number Of Ingredients 10

1 lb lean ground beef or turkey
1 pkg taco seasoning mix
1/2 large head of lettuce, sliced or chopped roughly
1 small onion, diced
15 oz can kidney beans, drained well
2 medium ripe tomatoes, diced
1 c heaping shredded cheddar cheese
1/2 c salad dressing
1/2 c thousand island dressing
taco flavored dorito chips, roughly crushed

Steps:

  • 1. Cook and scramble meat over medium heat. Drain well and cool completely.Add the taco seasoning mix dry and stir in to blend Best to make this meat mixture the night before.
  • 2. Chop lettuce, onion and tomato. Set aside in a large pan or bowl. Combine salad dressing and thousand island dressing in a small bowl; set aside. Add the drained kidney beans,to the lettuce, tomato and onion bowl. Add prepared meat mixture. Mix well and pour the dressing mixture over all and then fold in the cheese.Add 1 cup of crush roughly Dorito's.Chill until ready to serve.Add more crushed Dorito's on top of each serving...enjoy!
  • 3. Note: The las time I made this I did it very unconventionly, I had some of my "Bloody Mary Chili" leftover, so I heated it in the microwave , just enough to make it fluid, then strained it(I saved the juice to put in my meat loaf); and use the meat and veggies, added a diced tomato, the dressing and the Dorito's and I was done!
