SWEET STICKY RICE WITH MANGO image

2 cups short grain rice
2 cups coconut milk
1 1/2 cups sugar
1 teaspoon salt
Sliced mango, for serving

Steps:

  • Soak rice in about 3 cups water (enough to cover by 1-2 inches for 1-2 hours. Drain. Bring coconut milk, sugar, and salt to a boil in a stockpot. Remove from heat and set aside. Combine rice with 2 cups water and bring to a boil. Cover tightly and reduce heat to low. Cook until rice has absorbed all of the water. While still warm, combine with coconut milk mixture and stir well. Set aside to cool. Cut into serving portions and top with mango.
