Susan's All Butter Cookies (Easy) image

These are easy because they start with a cake mix. The flavor is wonderful. You can change up the flavors, too, by adding things like orange or lemon zest (2 teaspoons), sliced almonds (1/2 cup), or chocolate chips or toffee chips (1 cup).

1 box yellow cake mix (about 16 ounces)
1/4 c all-purpose flour
2 eggs
1 c (2 sticks) butter, very soft/melted
6 oz chocolate baking chips (optional)

Steps:

  • 1. Lightly grease or line cookie sheets with parchment. Preheat oven to 350°F. Soften butter - this can be done in the microwave on defrost (30%) for about 2-3 minutes.
  • 2. Mix together cake mix, flour, butter, eggs, and any optional ingredients until well blended.
  • 3. Drop by small tablespoons onto prepared pans, at least 2 inches apart. These cookies spread, so don't crowd them.
  • 4. Bake for 12-13 minutes, until brown around the edges. Cool in pans 5 minutes, then remove to rack to finish cooling.
