SUPER-EASY PULLED PORK SANDWICHES image

3T brown sugar
3T paprika
1 1/2 T garlic powder
1 1/2 T coarsely ground black pepper
1/2 T salt
1/2 c Dijon mustard
8-9 lb bone-in pork shoulder (also called a Boston butt roast) OR fresh picnic shoulder with rind removed
1c of your favorite bottled barbecue sauce
Sandwich rolls

Steps:

  • Adjust oven rack to lowest position and preheat oven to 250F. In small bowl mix brown sugar, paprika, garlic powder, pepper, and salt to make a dry rub. Line a shallow pan with foil. Pat the roast dry. Place it on a rack in the pan. Rub the roast with the mustard, and then sprinkle the dry rub all over the roast. Use it all. Roast it for 9-11 hours . It should have a deep mahogany crust. Let it cool, and then shred it into bite size pieces with your fingers. Add sauce. Can chill and reheat. Says it serves 18-20. I say less.
