Now that I eat Gluten Free where possible; I'm always looking for treats that are healthy and filling. This one fits the bill perfectly! :)

Steps:
- Blend all the ingredients together in a food processor or blender until smooth.
- Pour into cups and refrigerate.
- If you prefer your pudding thinner add some milk to it while it's processing. Dress with coconut, nuts, fruit, berries or your favourite whipped topping if you like. Be creative.
- Enjoy!
