summer blueberry cake image

i love fresh fruit from the orchard, luckily we recently moved and are about 1/2 mile from a wonderful orchard! i had some blueberry compote left over from homemade pancakes last weekend and did not want to waste it so i decided to bake a regular cake and add my own flavors! i also made a special "topping" using cool whip, cream cheese and some of the juice from the blueberries. (pictures to come, currently in oven, smells heavenly)

Number Of Ingredients 7

1 box(es) cake mix, any flavor(this depends on your own taste and the fruit being used)i used yellow
1 box(es) cheesecake pudding mix
1 cup(s) fresh blueberries in juice (compote)
2 teaspoon(s) baking soda
1 cup(s) french vanilla flavored coffee creamer(use this in place of water/oil mix calls for)
1 - tub cool whip
1 - small tub cream cheese

Steps:

  • preheat oven according to box. grease a 13x9 baking pan/dish. gather ing according to box, including extra's
  • Sift dry ing together into large mixing bowl, add wet ing mix according to package. Stir in fresh fruit, stir until just combined, cook to package directions.
  • if frosting let cool COMPLETELY
