stuffed potato boats image

my grand kids love this, I also make this recipe using yellow squash.

Number Of Ingredients 6

4 large baking potatoes
1 1/2 c any flavor stove top stuffing mix
1 half c bacon bits
1 c sour cream
1-2 c shredded cheddar cheese
you can add any other ingredient that you enjoy in baked potatoes.

Steps:

  • 1. cut potatoes in half. With a spoon scoop out center of potato until it looks like a boat.Mix all ingredients (except shredded cheese) together until well blended.Spoon mixture into middle of potaotes. Top with shredded cheddar. Wrap individually in foil sheets. Bake in 400 degree oven for 1 hour.
