Number Of Ingredients 14

4 green peppers
FILLING:
1 lb ground beef
14 oz spaghetti sauce
1/2 c rice
1 onion, chopped
1/2 c celery, chopped
1 egg
3 Tbsp half-and-half
3 Tbsp fresh parsley, chopped
1/2 tsp salt
pepper
cayenne
8 slice swiss

Steps:

  • 1. Slice green peppers down the middle and remove seeds and core. In a large mixing bowl, combine ground beef, spaghetti sauce, rice, onion, celery, egg, half-and-half, parsley, pepper, and cayenne. Fill green peppers with meat mixture, mounding a little on top of each. Filling will shrink when baked. Place green peppers in an ovenproof dish, large enough to hold peppers upright. Place slices of cheese on peppers. Bake at 400*F for about 35 minutes or until filling is set and cooked through and peppers are tender.
