Strawberry Spinach Salad w/Creamy Vinegar Dressing image

Not sure where I found the original recipe idea for this but I have tweaked until it's something I just can't get enough of!! The picture posted is of an open-faced grilled turkey sandwich with this salad and dressing on it.. and OMG is it GOOD!! The salad by itself is a fantastic accompaniment to a healthy meal but if you want to try the sammie, I've added directions for that as well.

Number Of Ingredients 10

6 ounce(s) fresh baby spinach leaves
1 pint(s) fresh strawberries, sliced
8 slice(s) bacon, cooked & crumbled (optional)
1/4 cup(s) red or vidallia onion, chopped
1/4 cup(s) sliced almonds (walnuts also work well)
CREAMY RASPBERRY VINEGAR DRESSING:
1 cup(s) mayonnaise ( no substitutions)
1/2 cup(s) sugar
1/4 cup(s) raspberry vinegar
1/8 cup(s) poppy seeds (optional)

Steps:

  • In a large bowl or a large ziploc bag, toss together spinach, strawberries, bacon (optional), onion, and almonds. (I use a ziploc to toss the ingredients if I am only using one serving- makes for easy storage. Otherwise I will then pour tossed ingredients into a large bowl.)
  • In a small bowl, whisk together mayo, sugar, vinegar, and poppy seeds (if using.)Serve on the side with salad. Store in refrigerator.
  • ** For sammie--- Butter & grill 1 slice of whole wheat or ciabatta bread, both sides. As second side is grilling, add 1 slice provolone and 3 slices of thin turkey meat. Remove from heat. Top with salad mix and drizzle with dressing. YUM!
