St Patricks Day Sandwich image

This sandwich is a huge hit with my family around saint patricks day. Its a bit more expensive then some lunchmeats, but corned beef is usually on sale that time of the year. Its a new take on the classic rueben (especially if you dont like saurkraut).

Number Of Ingredients 6

1/2 pound(s) corned beef (sliced)
4 slice(s) swiss cheese
4 slice(s) bread and butter pickles (large)
1 - loaf italian bread
1 teaspoon(s) butter
- thousand island dressing

Steps:

  • Heat greased frying pan on high.
  • Slice the italian loaf into thick slices. Butter both sides of each slice.
  • Assemble sandwiches (corned beef, swiss cheese and then pickles) and place in hot frying pan. Flip when golden brown.
  • Cook to a grilled cheese consistancy. Slice diagonally and enjoy. Dip in thousand island dressing if desired)
