SPINACH MUSHROOM QUICHE image

Number Of Ingredients 12

2tbsps oil
1 cup mushrooms
½ cup onion
4cups spinach leaves blanched, squeezed dry and chopped
½ tsp salt
1/4tsp pepper
3/4 cup heavy cream or half and half
2 extra large eggs
1/3 cup fresh goat cheese crumbled
1/4 cup grated Parmesan cheese
2tbsps chopped sundried tomatoes ( about 4)
one piecrust prebaked.I do not prebake my pastry

Steps:

  • Method: Saute mushrooms and onions in oil until done then add spinach and saute until hot about 4 minutes. Season with salt and pepper and place all in a colander to drain while doing the remainder. Whisk together eggs and cream, stir in goat cheese and parmesan sundried tomatoes and spinach mixture. Spread in your piecrust. Bake at 350. For 40 to 45 minutes or until knife comes out clean. Let it sit for 20 minutes efore cutting. Serves 8 The above recipe is for a 9 inch pie plate. I prefer a 10 inch pieplate and use 3eggs and 1 and ½ cups of cream and make sure you have 3 cups filling.
