Steps:
- Heat oven to 325℉.
- In a small bowl, combine breadcrumbs, ground black pepper, cayenne pepper, chili powder and ground thyme.
- Chop onion, carrot and red bell pepper to desired size.
- Combine vegetables, meatloaf mix and dry mixture.
- Add garlic and season the meat with kosher salt.
- Add the egg and fold until all combined.
- On a parchment paper lined baking sheet, drop the mixture on the parchment paper and flatten it so it is the same thickness all around.
- Meanwhile, combine ketchup, honey, cumin, Worcestershire sauce and hot pepper sauce. Slather on glaze after the meatloaf has been cooking for 10 minutes. Cook for another 40-45 minutes.
