SPICY CHICKPEA SALAD image

Number Of Ingredients 11

2 15-ounce cans chickpeas
1/2 pound cherry tomatoes
1 small red onion, finely sliced
6 tablespoons extra virgin olive oil
1 teaspoon minced garlic
2 teaspoons ground cumin
juice of 2 lemons, and zest of 1 lemon
salt to taste
pepper to taste
optional: 3 tablespoons Greek yogurt
chopped fresh parsley (or basil, mint, or cilantro)

Steps:

  • Drain the chickpeas and place in a salad bowl. Halve the cherry tomatoes and add to bowl. Slice the onion and add to bowl. In a small bowl, combine the olive oil, garlic, cumin, salt and pepper, lemon juice, and lemon zest. Optionally add Greek yogurt (if so, reduce olive oil by 3 tablespoons). Mix the dressing well. Add the dressing to the main salad bowl. Taste and adjust seasoning.
