Special Mocha Cupcakes image

Yield 1 dozen

Number Of Ingredients 17

1 1/2 cups all-purpose flour
1 cup sugar
1/3 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs, beaten
1/2 cup brewed coffee, chilled
1/2 cup oil
1 tablespoon vinegar
1 tablespoon vanilla extract

Mocha Frosting:
3 tablespoons semi-sweet chocolate chips, melted
3 tablespoons milk chocolate chips, melted
1/3 cup butter, softened
2 cups powdered sugar
1 tablespoon brewed coffee, chilled

Steps:

  • Special Mocha Cupcakes: Combine flour, sugar, cocoa, baking soda and salt; set aside. Combine remaining ingredients; add to flour mixture and stir well. Fill paper-lined muffin cups 2/3 full. Bake at 350 degrees for 20 to 25 minutes. Cool in tin on wire rack for 10 minutes. Remove from tin; cool completely. Frost with Mocha Frosting. Mocha Frosting: Combine chocolate and butter; gradually beat in powdered sugar. Stir in coffee until smooth.
