Steps:
- 1. Soak bamboo skewers in water for 20 to 30 minutes.
- 2. In a medium bowl mix orange juice, lime juice, olive oil, minced garlic cloves, ground cumin, paprika, salt, and oregano. Mix well and pour into a Ziploc bag. Set aside.
- 3. Cut red and yellow bell peppers into bite size pieces and put into a bowl.
- 4. Cut onion into bite size pieces and put into a bowl and set aside.
- 5. Cut chicken into bite size pieces and put into marinade and refrigerate for an hour or overnight.
- 6. Using soaked bamboo skewers, thread a chicken piece, a red bell pepper, chicken piece, an onion piece, chicken and yellow bell pepper. Alternate until all of the chicken and vegetables are used up.
- 7. Preheat grill.
- 8. Grill for 6 to 8 minutes till firm and peppers are tender and soft.
