Southwestern Chicken Skewers image

Number Of Ingredients 12

0.5 cups orange juice
0.5 units lime
1 tablespoons olive oil
2 cloves garlic
1 teaspoons cumin
0.5 teaspoons paprika
0.5 teaspoons salt
0.5 teaspoons dried oregano
1 units red bell pepper
1 units yellow bell pepper
1 units red onion
2 pounds chicken

Steps:

  • 1. Soak bamboo skewers in water for 20 to 30 minutes.
  • 2. In a medium bowl mix orange juice, lime juice, olive oil, minced garlic cloves, ground cumin, paprika, salt, and oregano. Mix well and pour into a Ziploc bag. Set aside.
  • 3. Cut red and yellow bell peppers into bite size pieces and put into a bowl.
  • 4. Cut onion into bite size pieces and put into a bowl and set aside.
  • 5. Cut chicken into bite size pieces and put into marinade and refrigerate for an hour or overnight.
  • 6. Using soaked bamboo skewers, thread a chicken piece, a red bell pepper, chicken piece, an onion piece, chicken and yellow bell pepper. Alternate until all of the chicken and vegetables are used up.
  • 7. Preheat grill.
  • 8. Grill for 6 to 8 minutes till firm and peppers are tender and soft.
