Southern Mixed Greens image

My mama used to cook these all the time when I was growing up. I still love them.

Number Of Ingredients 7

3 c each: fresh collard, mustard & turnip greens
8 slice bacon, chopped
6 oz cooked ham, diced small
2 Tbsp sugar
8 c water
2 qt chicken broth
to taste salt & pepper

Steps:

  • 1. To prepare the greens: Rinse them well. Cut the leaves from the stems and discard the stems. Then chop or tear the leaves into pieces. You should have 3 cups of the pieces for each type of greens.
  • 2. Heat a large soup pot or Dutch oven over medium heat. Place the bacon pieces in the pot and cook until they are crisp.
  • 3. Add the ham, chicken broth, water and sugar and bring to a boil. Boil for 5 minutes.
  • 4. Stir in the green, salt and pepper.
  • 5. Lower the heat. Cover and simmer for 30 minutes. Stir occasionally.
  • 6. Strain to serve.
