Southern Banana Nut Bread image

This banana bread recipe was in The Best of Country Cooking Coobook. It is really good with pecans in the bread and in the topping.

Number Of Ingredients 8

1/2 c butter-flavored shortening
1 1/2 c sugar
2 eggs
1 c mashed ripe bananas (about 2 medium)
1 tsp pure vanilla extract
2 c self rising flour*
1/2 c buttermilk
3/4 c chopped pecans

Steps:

  • 1. In a mixing bowl, cream shortening and sugar; beat in eggs.
  • 2. Blend in bananas and vanilla.
  • 3. Add flour alternately with buttermilk,
  • 4. Fold in pecans.
  • 5. Pour into two greased 8-inch x 4-inch x 2-inch loaf pans
  • 6. For topping combine 1/4 to 1/3 cup mashed ripe bananas, 1 1/4 cups confectioners sugar and 1 teaspoon lemon juice; spread over loaves, Sprinkle additional chopped pecans.
  • 7. *Editor's Note: As a substitute for each cup of self-rising flour, place 1 1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup; add all-purpose flour to equal 1 cup.
