This banana bread recipe was in The Best of Country Cooking Coobook. It is really good with pecans in the bread and in the topping.

Steps:
- 1. In a mixing bowl, cream shortening and sugar; beat in eggs.
- 2. Blend in bananas and vanilla.
- 3. Add flour alternately with buttermilk,
- 4. Fold in pecans.
- 5. Pour into two greased 8-inch x 4-inch x 2-inch loaf pans
- 6. For topping combine 1/4 to 1/3 cup mashed ripe bananas, 1 1/4 cups confectioners sugar and 1 teaspoon lemon juice; spread over loaves, Sprinkle additional chopped pecans.
- 7. *Editor's Note: As a substitute for each cup of self-rising flour, place 1 1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup; add all-purpose flour to equal 1 cup.
