Sour Cream Maple Bread image

Had some sour cream left over from my "Sour Cream Chocolate Banana Cake"--so made this for breakfast tomorow- that is if it makes it until then...it was almost gone before it was cooled off! Photo shows double batch by Enro...

1 3/4 c all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 c butter, room temperature
3/4 c pure maple syrup -not pancake syrup
1 c dairy sour cream
1 large egg
1/2 c chopped pecans

Steps:

  • 1. Heat oven to 350^. Spray an 8-inch bread pan with non-stick oil;set aside. --- In a small bowl. stir and toss together the flour, baking powder, baking soda,and salt;set aside.
  • 2. In a mixer bowl beat the butter and slowly add the Maple syrup. On slow speed now mix in sour cream and egg. Stir in pecans. Add the flour mixture and stir until just blended.
  • 3. Spoon batter into the prepared pan and bake for about 50-60 minutes;or until a toothpick inserted comes out clean. Remove from oven and let set on wire rack to cool for 15 minutes; then remove from pan and cool completely. NOTE: Can use this batter to make muffins too!
