Slow Cooker Shrimp Fried Rice image

What could be more surprising than the fact that you can make shrimp fried rice at home? The fact that you can simply cook up this bed of white rice with tiny shrimp, a colorful assortment of veggies, and bits of egg in your slow cooker.

Number Of Ingredients 8

1 3/4 C. Long-Grain Rice, uncooked
2 Tbs. Low-Sodium Soy Sauce
2 Garlic Cloves, minced
3 1/2 C. Low-Sodium Chicken Broth
1 Medium Red Bell Pepper, stemmed, seeded, and diced
1 16 oz. package Frozen Mixed Vegetables, thawed and drained
2 C. Pre-Cooked Baby Shrimp, cleaned and deveined
2 Eggs, lightly beaten

Steps:

  • Mix together the rice, soy sauce, garlic, broth, bell pepper, mixed vegetables, and shrimp in a large slow cooker. Cover and cook on high 2 hours, or until rice has fully absorbed liquid. Pour eggs over fried rice mixture. Continue cooking for 45 minutes or until egg has set. Stir before serving.
