Sloppy Joe's, an Adaptation from the Jessica Seinfeld Book image

My family loves my rendition of Jessica Seinfeld's sloppy joes. They arelower in Weight Watcher points too (4 points for one serving of the sloppy joe mix and another 3 for the bun)...which is good for me.

Number Of Ingredients 15

1 teaspoon coconut oil (or other oil)
1/2 cup onion, diced
1/2 cup celery, diced
1 garlic clove, minced
1 1/4 lbs ground turkey
1 1/4 cups butternut squash, pureed
1 carrot, finely chopped
1 cup chicken broth
1/2 cup tomato paste
3 tablespoons Worcestershire sauce
1 teaspoon chili powder
1 tablespoon brown sugar (optional...I actually use xylitol)
salt
pepper
8 hamburger buns (I used sandwich thins)

Steps:

  • Heat the oil in large skillet over medium high heat.
  • Add the onion, celery, and garlic and cook until softened.
  • Add the turkey and break up into small pieces, stirring until no longer pink.
  • Add the squash puree and carrot.
  • Add the broth and stir.
  • Add the tomato paste, worcestershire, chili powder, xylitol, salt, and pepper.
  • Cover and cook over medium heat until carrots are cooked and flavors are blended. If mixture has too much liquid in it, just cook with the cover off for a few minutes to thicken.
  • Serve on sandwich thins with fixings such as sliced onion, relish, ketchup, and tomato.
  • I had this for dinner tonight with strawberries and a zero point cucumber salad, so had a nice dinner for 7 points.
