SKILLET TACO PIE image

Number Of Ingredients 7

1 lb lean ground beef
2 cans (14 1/2 oz each) diced tomatoes and mild green chilies
1 can (11 oz) vacuum packed corn
1 pkt (1 1/4 oz) taco seasoning
8 corn tortillas (about 5 in diameter), each cut into 4 wedges
1 c (4 oz) shredded reduced fat cheddar cheese
Toppings -- sour cream, shredded lettuce, diced red onion and tomato

Steps:

  • Cook beef in a 10 in skillet over medium high heat, breaking up clumps of meat with a spoon, 3 minutes or until no longer pink. Stir in tomatoes, chilies, corn and taco seasoning. Bring to a boil, reduce heat and simmer 3 minutes. Pour into medium bowl. Wipe skillet clean; coat with nonstick spray. Cover bottom with 1/3 the tortilla wedges. Top with 1 1/2 c beef mixture then sprinkle with 1/3 c cheese. Repeat layers twice. Cover and cook over medium low heat 10 minutes or until layers can be easily pierced with tip of a knife. Cut in wedges and serve with toppings.
