Steps:
- Rinse shrimp and set aside. Dice bacon and fry lightly in large skillet; drain and set aside. Add enough peanut oil to skillet to make a thin layer. Heat over medium flame until hot. Toss in shrimp, then mushrooms and saute about 3 minutes. Sprinkle with scallions and bacon (reserve a small amount of scallions, parsley, and bacon to sprinkle on top of finished dish as garnish); add garlic, season with tabasco, lemon juice, parsley, salt, pepper. Spoon shrimp mixture over grits and add garnish. Serves 4 people. Enjoy--yum!
